Frozen Watermelon Strawberry Daiquiri Slushie is definitely the perfect drink for hot summer days. I know that it’s not technically summer yet, but today is such a hot day here in Holland… Pfff… 30 ºC (86 ºF)… I’m almost melting here! So I decided that it would be totally appropriate to share this summer recipe with you guys! How is the weather out there? Hope you are enjoying sunshine as well and ready for some delicious frozen cocktail!
Without any doubts, watermelons and strawberries are ones of the best seasonal summer treats. Nothing is so refreshing on a hot summer day as a cold watermelon straight from a fridge and nothing is so sweet and delicious as summer strawberries! And in this frozen watermelon strawberry daiquiri slushie these two are making a wonderful, sweet and refreshing combo. Because I’m 39 weeks pregnant (OMG, I can’t believe how time flies! Our baby-girl can show up every minute now!), I made a virgin version. But it’s totally up to you to make this drink boozy. Last summer, I made it with rum and it was also delicious & really refreshing!
It’s one of those drinks that everyone will love, and you can make it for a big crowd, because it’s so easy. Just put all the ingredients in a blender and you are done! Delicious! Try it for your next summer party and I’m sure you will make it again and again!
- 3 cups frozen watermelon chunks
- 1 cup sliced fresh strawberries
- 2 cups rum can be omitted or reduced to taste
- Juice of 1 lime
- 100 ml mint infused syrup
- Ice if needed
- Watermelon wedges for decoration
- 1 cup water
- 1 cup sugar
- 1 cup packed fresh mint leaves + mint stems
- Bring water with sugar to boil in a small saucepan, stirring until sugar is dissolved. Reduce heat to low and add mint, simmer 2-3 additional minutes. Remove from heat, let the syrup cool completely. Strain out the mint. You can keep the syrup for about 2 weeks in an airtight container in the refrigerator.
- Combine all ingredients in a blender, process until smooth. If you like your cocktails thick and slushy like I do (look at the texture on the pictures), you can add ice to get the right consistency. If you prefer your cocktail less slushy, you can skip the ice.
- Garnish with watermelon wedges and enjoy!
